"That" is a demonstrative pronoun i.e. it is used to denote something. In the corrected sentence "all the information you want" already specifies the information that the person wants and hence to accentuate it with "that" is unnecessary.

The noun information doesnt carry any pronoun. So 'information you want' is correct.
