"Dead of Night" is an idiom so it can't be "Dead of the Night" as an idiom is a predefined phrase.

If something is movable then we use into and if it's static then we use into.
eg: A boy fallen into the well. (moveable i.e boy is in motion).
Lions live in jungle. (static).

In is used for static sentence and into is used for dynamic sentence.
