H is used for hydrogenation of unsaturated compounds.

Is vanaspati the same with margarine?

I agree that the answer is hydrogen.

This process is commonly known as hydrogenation NI used as catalyst.

Hydrogen is added for converting unsaturated to saturated compound.

Ni is heterogeneous catalyst.

This is Hydrogenation of oil using H and Ni.

Unsaturated vegetable oil is converted into vanaspati a saturated compound so to do so it is needed that the bonds of oil molecule be held tightly together which is done by placing H atom.

For the manufacture of vanaspati, edible vegetable oils are extractedand they are of two types.

1. Expeller quality
2. Solvent extracted oil.

The second one can not be used directly. So, they are treated with "HYDROGEN"gas for the preparation of vanaspati.

Hydrogenation of oil occuers in the presence of hydrogen gas passed through the oil by using nickel catalyst.
