Then (Total)=100% =( 1% * 100) ===> 100*7 = 700Apples

A simple solution:
ie. 40% sold means
Remaining 60%=420
Therefore 420/60=70 ie 10%
therefore 70*40%=280
ie 280+420=700 total apples.
