Yes, "untie" is the correct answer as we say commonly "tie" the knot. Not 'close' or tight the knot. So, open and loose can be ruled out.

Knots cloud mean bolts too, which would be loosened to open.

Word "knot" means tie. So the alternative meaning for open is untie.

Word "knot" mainly used for tie, "untie" suits the best.
