It can't be cold because cold always signifies the extreme of cool (like hot for warm). Nobody can sleep in a "cold" shade. A cool wind blows, for instance, and not "cold".

It also can't be cooling because cooling is a verb. Here, the blank line signifies a word that would describe the word "shade". Like, an alert officer. Alert is an adjective. But, we won't say: an alerting officer, that's wrong. This is because alerting is a verb. "He is always alerting me" is the correct usage of alerting.

Similarly, "I am cooling the tea" and "I will drink a cool coffee" are more correct.

Yes, there is some adjectives that come in the -ing (gerund) form, like amazing, flaming, burning, etc. But cooling and warming are verbs.
