The word conquered is also relevant and is used when the industry is taking over, like conquering a nation which is not done in the shadows but in broad light. The word captured is right in this situation because they've used the word little-publicized.

In the context of this sentence, conquered or captured has no difference since they do specify it as "The entire soft drink market in Afghanistan".
