Fine grains are used for the hard work because due to hard work, fine grains will be worn out quickly and thus new self-sharpened abrasive layer will be out.
So the blunting of the grinding wheel can be avoided and dressing required won't be frequent.

Coarse grains are good for higher material removal rate and are suitable for the soft ductile material.
Fine grain take a small depth of cut provide better surface finish, generate less heat, i.e. these are use for hard brittle material

Grain size is selected based on the surface finish to be produced on the work piece for rough grinding coarse and medium, for finishing very fine grains are used.

Maybe because for fine-grained wheel there are more number of cutting edges.

Fine grains are arranged very nearly so their hardness is too high so it is used for hard material cutting.

Coarse grained abrasive are used for fast removal of materials and fine grained wheel are used for finish of work. Coarse grained for grinding soft materials and fine grained for hard and brittle materials.
