We are flipping words upside down. EME becomes EWE on flipping upside down. Similarly, MMM will become WWW.

As observed by series first "E" faces (right, down, right) in the first word middle ("E") is down so next word all becomes down (down, down, down) , but in the third the word is "E" faces (right, up, up) so next word "E" faces all are in up direction (up, up, up) ,

As observed by series first and third letter remaining the same the diff will happened in the case of middle letter only.
