We can't say that Rath Yatra is celebrated in the honour of any other god than Jagannath because the god we worship is Jagannath and his his siblings.
Though Ram and Vishnu are like jagganath but on that day we don't worship Lord Ram or Lord Vishnu.

Because lord Jagganath said himself that once in a year he will travel to his aunty's that is Gundicha mandir and he named that day to be Rath Yatra.
