Because bulk modulus of elasticity is inversely proportional to compressibility.
The compressibility of incompressible fluid is 0 than the bulk modulus of elasticity is infinite for incompressible fluid.

Bulk modulus of elasticity is the inverse of compressibility.
And compressibility of water is zero. So,
1/0 = infinity is bulk modulus of elasticity.
