Let us take a simple practical example of refrigerator. In freezer section (called as evaporator) refrigerant enters in liquid state and exits in gaseous state. To convert ammonia from liquid to gaseous state we add first sensible heat (subcooled liquid to saturated liquid) and then we add latent heat which converts it saturated liquid to gaseous form.

Sensible change in temperature of gas is the latent heat required to vaporise the liquid and process is also known as adiabatic saturation, and temperature of gas is adiabatic saturation temperature or wet bulb temperature.

If we are unaware of the actual process (i.e) humidification and cooling, it is clear from the term "evaporative cooling" that the process must involve addiction of latent heat for evaporation and removal of sensible heat that is cooling.
