20 is the number of amino acids that can be incorporated into protein structure.

There are 20 primary amino acids, those that can be coded in DNA but we have, more than 300 amino acids known.

The standard amino acids are 20, but there are numerous AA that cannot be coded by DNA eg hydroproline.
