It's just because, human body lacks cellulose enzymes to digest cellulose as the animals do!

Secondary, human's lack the four chambers as the animals do. Like cows this digestion is facilitated by those chambers.

Generally for cellulose digestion we need cellulase enzyme. Human body does not contain cellulase enzyme. That is the reason why we can not eat grass but an cow does it, cow contains cellulase enzyme.

The human body lacks in the enzyme cellulase, which is essential to convert cellulose into simpler form. Hence the humans cannot digest cellulose, unlike plants which do possess the enzyme cellulase.

The enzyme present in human is @ (alpha) amylase which is specific to digest alpha 1-4 linkage, but the linkage in cellulose polysaccharide is Beta 1-4 linkage.

The body of a human does not have dna coding for enzymes that digest cellulose, these enzymes are found in animals that eat grass but not in humans.

Cellulose has beta 1-4 bonds between glucose molecule in humans there is no presence of beta 1-4 glucosidase enzyme which acts on such bonds.

Yeah, our body do not have enzymes for digesting cellulose while other mammals does, i.e. Ruminants.
