Strain energy is the energy, When stored the energy to any material such the material is not breaking is called strain energy.
For example - We draw the Strain - Stress Diagram to applied the force Strain and Stress both are increase but become a point our material just breaking this point is Elastic Point.

Strain energy is the energy which is stored in the body which we can get back after removal of external force. It is only possible only up to elastic limit. Above which rest of the stored energy released in the form of heat.

It's by definition that stain energy stored in a body is within elastic limit. Yeah there will be some more strain energy after elastic limit. But as after elastic limit body can't regain back it's original position and so we do not consider that energy. Because after yielding point body is said to be failed.
