Light produces its component colours due to the dispersion of light. Right?

Interference of light more specifically, thin film interference.
Reason:
When light falls on the thin oil film, some light reflects from the top surface,
Some reflects from the bottom surface. These reflected light waves interfere with each other. Different wavelengths interfere differently, producing colourful patterns.
