Baking soda is used in bread it softs the foodstuffs it releases Co2 when reacts with water and Na2CO3.

It is sodium bicarbonate because it is used in changing temporary hard water to soft water and when we add baking soda which is a sodium bicarbonate to temporary hard water and boil it turns soft water and it lathers readily with ordinary soap.
